Perfect for a summer picnic this Bauru Beef Sandwich is a recipe from the Giffords Circus Cookbook.
BAURU BEEF SANDWICH – serves 6-8
1 cottage loaf
Mayonnaise & English mustard for spreading
300g rare roast beef, thinly sliced
2 beefsteak tomatoes, thinly sliced
handful of spinach leaves
2 x 125g balls of mozerella balls
Method
Preheat the oven to 120oC
Cut a horizontal slice off the top of the loaf of bread, then dig out the soft inner part and save for making breadcrumbs.
Smear the inside with mayonnaise and mustard, then add layers of the beef, tomatoes, spinach and mozzarella. Wrap in foil and bake for 30 minutes before chucking in your picnic hamper with a wooden board and a bread knife. The loaf should still be warm when you unwrap it!
